Thanks to Kylie Kwong of restaurant Billy Kwong (now at Potts Point in Sydney) . you can try her Quandong Saison (season) Beer . Specially brewed at Young Henrys in Newtown . The ingredients for the single batch came straight from the Australian bush . Its good to know that Kwong among a few others have started to focus on sustainable local and organic produce.

“they’re tart & tangy & delicious ” says Kwong . Kwong will have exclusive use of the 1st 500 litres , after that Young Henrys will share what is left with local pubs around sydney so GET IT WHILE YOU CAN !!

I'm getting alot of questions now about where to buy Quandongs , and i wish i had a simple answer !!

Quandongs are seasonal so they dont grow all year round but luckily enough there are a few companies out there now which are collecting the fruit , peeling and de-seeding it and freezing them (note : frozen quandong can last for years) .

Anyway here's a list of providers that iv'e found in Australia 1st  including one of Australia's biggest farms for buying them fresh.

There are a few other providers around that can get you quandongs but they are not full time commercial operators . If you are in Victoria and have the time to get to Broken Hill you will find that many locals have them growing in their back yards !! Also Broken Hill has one of the largest Quandong farms around   named Quandong Farm Broken Hill . If you can i would buy fresh Quandongs in season straight from  the farm , if you cant they can certainly tell you where else you can buy them from and who they supply.

Quandong Sorbet

Quandong Sorbet (serves 2)

  • 4 cups quandong, peeled, seeded and pureed
  • ½ cup sugar
  • ½ cup water
  • Oil for brushing tin

Make a sugar syrup by bringing sugar and water to the boil. Reduce heat and simmer until sugar has dissolved. Remove from heat and allow to cool then add the quandong puree. Brush a  tin or individual cups with oil. Pour in the sorbet mixture and freeze until firm. Turn out the sorbet loaf onto a serving platter  or serve individual cups. Add the quandong sauce (see below) and serve.

Quandong Sauce
3 cups fresh quandongs
1/2 teaspoon vanilla essence

Place ingredients in a blender and process until smooth. Spoon into serving bowls and serve with the sorbets.

Quandong Cooking Methods

  • Dried fruit is equal to about half the weight of fresh fruit
  • To sweeten quandongs, generally about the same weight of sugar and rehydrated fruit is used
  • To retain the shape of dried fruit, soak to rehydrate, then bring them to the boil and simmer for no more than 5 minutes
  • Dried quandongs can also be cooked in the liquid of a stew or other wet slow-cook methods
  • Quandongs can be used in pies, cakes, tarts, preserves and sauces or made into puree
  • Add poached quandongs to breakfast cereal, swirl through yogurt or over ice cream
  • Try them spiced with cinnamon or nutmeg
  • They team well with macadamia nuts, bunya nuts, native mint and wild thyme

 

Quandong Chocolate Brownies

Quandong Chocolate Brownies

200g unsalted butter,
100g chocolate,
100g chocolate, any chocolate
397g can caramel
200g caster sugar
4 medium eggs,
130g plain flour
50g cocoa powder
10 Quandongs de-seeded (just the flesh yeah !)
Method

Heat oven to 180C . Grease then line a 23cm square baking tray tin with baking paper. Melt the butter in a medium pan, break in all the chocolate, then remove the pan from the heat and wait for the cubes to melt.
In a small bowl, mix 175g of the caramel . Put the rest of the caramel in a large bowl with the sugar and eggs, and beat with an electric hand mixer .
Whisk in the chocolate, Quandong and butter. In another bowl, combine the flour, cocoa , then sift this on top of the chocolate mix. Beat briefly until smooth.
Pour half the brownie batter into the tin and level it with a spatula. Using a teaspoon, spoon half of the caramel on top of the batter layer in thick, evenly spaced stripes. Spoon the rest of the brownie batter on top and smooth it out, trying not to disturb the caramel beneath. Top with the rest of the caramel in the same stripy fashion. Drag a skewer or tip of a knife through the caramel to make a feathered pattern on the top.
Then bake for 25-30 mins or until risen all the way to the middle with a firm crust on top. When ready, the brownie will jiggle just a little when you shake the tin. Let it cool completely in the tin, then cut into squares.

Quandong Cake Recipe

Quandong Cake Recipe
Olive oil, to grease
10 fresh quandongs
1 cup (150g) self-raising flour
1/2 cup (75g) plain flour
1 teaspoon bicarbonate of soda
1/2 cup (80g) brown sugar
3/4 cup (185ml) olive oil
3 eggs
1 teaspoon vanilla essence read more

Icing

250g spreadable cream cheese
1/2 cup (80g) icing sugar
4 quandong flesh puree’d
Method

Step 1
Preheat oven to 170C or 150C fan-force. Grease a 20cm (base) round cake pan lightly with oil, and line with non-stick baking paper. Mash the Quandong flesh into a rough paste using a potato masher, and set aside. Sift the flours, bicarbonate of soda into a large bowl.

Step 2
Put the brown sugar, oil, , eggs and vanilla in a separate bowl. Use a balloon whisk to mix until combined.

Step 3
Pour the oil mixture into the dry ingredients. Use a wooden spoon to stir gently until just combined. Now ,is in the Quandong

Step 4
Pour the mixture into the pan and bake for 1 hour. Set aside for 5 minutes, before turning out onto a wire rack to cool completely.

Step 5
To make the icing, place the cream cheese, icing sugar and quandong into a bowl . Use a wooden spoon to mix until well combined.

Step 6
Spread the icing over the cake.
